Apple Chia Bircher Muesli

1 small grated apple
8 tbsp oats
1 tbsp chia seeds
2 tbsp chopped walnuts or almonds
3-4 tbsp plant yoghurt
250 ml plant mylk
1/2 tsp cinnamon
1 tbsp almond butter
1 tbsp maple syrup (optional)
– add all ingredients into a bowl, mix and let sit in the fridge over night. Serve with sliced kiwis, sliced banana and blueberries and a dollop of gooey peanut butter.
