Baked sweet potato. Stuffed with hummus, red cabbage, Sweet peas and fried Habanero Onions.

1. Wash, stab and rub sweet potato with Olive Oil then salt. .
2. Bake Sweet Potato at 425 degrees. .
3. Salt the Cabbage and let sit as potato bakes. .
4. In shallow olive oil, fry tomatoes, and onions. If you like it spicy like I do, add the Habanero and let cook for about 5 minutes or until golden brown.

5. Cut baked Sweet potato into half, dig about an inch into each half, mash duh up potato crumbs with hummus and fill them back into the potato halves. Back again for about 2 minutes.

6. Steam sweet peas until cooked. Season to taste.

7. Wash salted cabbage.
.
8. Finally, top potato halves with cabbage, Peas and Fried Red Onions/Tomatoes. Enjoy!
