4 bananas, mashed
1/2 cup melted vegan butter or coconut oil
1 flax “egg” (1 tbsp ground flaxseed mixed with 3 tbsp water)
1/2 cup coconut sugar
1/3 cup granulated stevia or xylitol
1/3 cup coconut milk
2 cups oat flour
1/2 cup all purpose flour
1/2 cup hemp seeds
1/2 tsp salt
1 tsp cinnamon
1/4 tsp baking soda
1 1/2 tsp baking powder
1/2 tsp vanilla extract
1 1/2 cups vegan dark chocolate, chopped
Preheat oven to 175C/350F
Mix together dry ingredients in a large bowl and set aside
Mix together the wet ingredients until well combined and gently fold through the dry until just incorporated.
Transfer to a lined loaf tin and bake for 50-55 minutes until the top is golden and a toothpick comes out just clean.
Allow to cool slightly before slicing. #
