Black Bun Beetroot Bean Burger

Ingredientsâ €
Beetroot Burgerâ €
1 Cup boiled beetroot â €
1/4 can of black beans (drained)â €
25g chickpeasâ €
25g quinoaâ €
1 small carrot shredded and chopped finelyâ €
1/2 a red onionâ €
15g diced shiitake mushrooms (or portobello)â €
8 walnuts finely crushedâ €
Paprika spicesâ €
Pinch of Salt and pepper to tasteâ €

Activated Charcoal Bunâ €
For 6 buns we use:â €
500g flour with activated charcoal â €
1g yeastâ €
20g Saltâ €
300ml of waterâ €

Directions for Bunsâ €
Mix the ingredients the opposite way around for excellent results. Pour the Luke warm water in a mixing bowl and stir in the salt. Add 10% of the flour and mix together. Then add the yeast and mix the rest of the flour in until you have a springy dough. Let rest in a warm place for 2 hours. Knead again, let rest for 30 minutes. Now divide your dough equally and leave again for another 30 minutes before baking in the oven at 375* Celsius.â €

Directions for Burgersâ €
In a large skillet or frying pan on medium heat, slowly glaze your onions, mushrooms and carrots. Add your drained black beans and chickpeas. Add salt, pepper and your walnuts. Crush roughly with a fork, mix in the quinoa and leave to cool in the fridge. Divide the mixture to form 2 patties. With your oven at 180 degrees C (360 f) bake for 45 minutes. Bake a little longer if needed. â €
