Bruschetta on sweet potato! Baked sweet potato rounds with homemade salsa

a healthier snack than chips and store-bought salsa! 🍠 🍅 🌶 If you make the sweet potato rounds thin they’ll be more like “chips” and if you make them thicker they’ll be more like “toast” (I love both):

Ingredients (for 2)
1 sweet potato cut into rounds

Homemade salsa (“pico de gallo”)
2-3 medium tomatoes
1/2 onion
2 garlic cloves
salt & pepper
lime juice
1/2 jalapeno (optional)
chili powder (optional)
cilantro (optional)

Sweet potatoes:
Cut sweet potato into rounds (less than half an inch), brush some oil on top and bake at 425 until crispy (I used my @bravahomeoven!)

Salsa:
Top with homemade salsa – blend all salsa ingredients listed above in a food processor (I used a hand held food processor). You can store extra salsa to use on tacos etc.
