Buckwheat pancakes topped with almond butter, raspberries and maple syrup

3/4 cup buckwheat flour⠀
1 tsp baking powder⠀
2 tbsp coconut sugar⠀
pinch of salt⠀
1 cup soy milk⠀
1 tbsp apple cider vinegar⠀
1 tsp vanilla⠀

How to make:⠀
Add apple cider vinegar to soy milk, stir well and set aside. In a mixing bowl combine flour, baking powder, coconut sugar and salt. Add milk mixture and vanilla and mix until combined. Bake pancakes on a hot skillet greased with a little bit of oil.⠀
