Ingredients: 
A box of cannelloni.
1/2 onion, finely diced.
4 cloves garlic. 
1/4 cup chickpea flour.
350g vegan cream cheese.
359g spinach.
2 medium zucchini, grated.
1/3 cup grated vegan cheese.
Pinch nutmeg.
Salt and pepper.
Homemade or store bought pasatta. .
Method.
.
1. Preheat oven to 200 C/400F. Set aside a large baking dish.
2. Add onion, garlic, salt, pepper, chickpea flour, spinach, zucchini, vegan cheese and cream cheese to a bowl. Use hands to mix together.
3. Use a popping bag or spoons to fill each cannelloni shell. Arrange side by side in the baking dish.
4. Cover with pasatta and top with extra vegan cheese. Bake for 30 mins, and enjoy with a salad!
