Cardamom and Honey Pear Loaf Cake

Makes 1 loafâ €
200 g all purpose flourâ €
100 g wholemeal flourâ €
80 g raw cane sugarâ €
1 tsp baking powderâ €
2 tsp ground cardamomâ €
2 tbsp flax mealâ €
6 tbsp waterâ €
180 ml vegetable oilâ €
120 ml oat milkâ €
1 tbsp maple
1 pearâ €

Heat the oven to 175°C and line a loaf pan with baking paper.⠀
Mix together the dry ingredients in a larger bowl.â €
Prepare the flax egg by mixing flax meal with water. Set aside for a few minutes. Meanwhile mix together the rest of the wet ingredients.â €
Slowly fold the wet ingredients and flax egg into the dry. Transfer into the lined baking pan.â €
Wash the pear and peel, if needed. Cut in half and core. Now slice both sides into thin slices and arrange over the top of the batter.â €
Bake for 35 – 40 minutes.â €
