Chickpea tomato stew with spiralized kohralbi – 20 min lunch.

This is my first time trying kohlrabi after my friend has been raving about it for months – trying to switch things up so I don’t have rice and quinoa every day and a bit bored of zoodles at the moment. Have you tried kohlrabi? I think I like it!

Chickpea Tomato Stew Ingredients:
1/2 onion
2-3 garlic cloves
1/2 bell pepper (used yellow)
3-4 tomatoes pureed
1 tbsp tomato paste
1/2 can chickpeas
salt & pepper
1 tsp cumin
1 tsp paprika
1 tsp mild chili powder
bit of cayenne
top with crushed pistachios & parsley or cilantro

Serve with:
spiralized kohlrabi
(you can also eat with quinoa, rice etc)

Directions:
Saute onion & garlic. Add diced bell pepper and saute until softened.

Puree 3-4 tomatoes. Add tomatoes and the tomato paste to the pan. Add salt, pepper and all the spices. Add chickpeas. Saute for another 5 minutes or so and taste for flavor.
