Coconut tofu tacos

Recipe:
Ingredients⠀
140z of diced tofu⠀
For the tofu:⠀
1/2 cup of full fat coconut milk⠀
juice and zest of 1 lime⠀
1 tsp of ground ginger⠀
1/8 tsp of salt⠀
sprinkle of cayenne pepper ⠀
For the pineapple salsa:⠀
1/2 cup of diced pineapples⠀
1/2 cup of sliced grape tomatoes⠀
1/4 cup of minced red onion⠀
2 tbs of chopped cilantro⠀
1 minced jalapeno ⠀
juice of 1 lime⠀

For the chipotle mayo:⠀
1/2 cup of vegan mayo (we used follow your heart)⠀
1 chipotle pepper⠀
tortillas⠀
black beans⠀
coconut jerky ⠀

How to make:⠀
1. Preheat oven to 400º F. In a large bowl combine all ingredients for tofu and mix well with a spoon. Allow tofu to marinate for 10 minutes and transfer onto a baking sheet. Bake in oven for 40 minutes each side.⠀
2. Combine all ingredients for salsa in a large bowl. Mix well and set aside. In a blender combine mayo and chipotle pepper, blend until smooth and set aside.⠀
3. Once tofu is ready remove from. Grab tortillas and add beans, salsa, and coconut jerky. Finish off with chipotle mayo, fresh lime. Enjoy!
