Cranberry cashew toasties

Cashew cheese⠀
1 cup cashews, soaked 30 mins in hot water ⠀
1/2 cup nutritional yeast ⠀
2 tsp apple cider vinegar ⠀
4 tbsp coconut cream/fat ⠀
3 cloves garlic, minced ⠀
1/2 tsp smoked salt (can sub regular) 
3 tbsp water⠀

Cranberry jam⠀
300g fresh cranberries⠀
2 tsp coconut sugar ⠀
1/2 cup water⠀

Prepare cashew cheese by draining cashews and adding to a food processor with all other ingredients. Blend on high until really smooth, taste and check seasoning. Pour into a jar and keep in the fridge for up to a week.⠀
Make cranberry jam by adding cranberries and coconut sugar to a saucepan over a medium heat. Simmer until the cranberries start to break down and bubble up. Add the water and stir until thick and jammy, around 15 mins. Store as above. Enjoy!
