Creamy thick carrot ginger soup with few ingredients 🥕 🥕 🥕

Ingredients:
8 carrots
4 garlic cloves
1 cup veggie stock
1 inch cube of fresh ginger
a handful of raw cashews
1 tsp apple cider vinegar

Directions:
Roughly peel and chop around 8 carrots and lay out on a baking sheet with 4 cloves of garlic (leave the skin on them to prevent them from burning, but chop the end off, then just squeeze them out when they’re done and the garlic will pop out). Coat with olive oil, salt + pepper then roast at 400 for about half an hour (depending on how big you cut the carrots!).

Add the roasted carrots + garlic to a high speed blender along with a cup of veggie stock, a 1” cube of fresh ginger, a handful of raw cashews + 1 tsp apple cider vinegar ~ blend until smooth + serve with a hunk of bread and lots of coriander!
