Easy green split pea soup

this isn’t very pretty but I wanted to share because it’s a super easy delicious plantbased lunch with minimal ingredients (with instantpot directions!) Split peas are an amazing source of plantbased protein & fiber – 12g protein in just 1/4 cup (dry) and 13g fiber.

Ingredients for 4:
1 cup green split peas
3 cups veggie broth (I make my own see notes below)
1 garlic clove
1/2 onion
1 carrot
1 green onion
1 cup potato chopped
salt & pepper
spices: 1 tsp thyme + oregano + pinch of cayenne
(optional) 1 tbsp nutritional yeast

Sautee onion and garlic in instant pot first, then add all the over ingredients, seal the instant pot and set it to manual high pressure 15 minutes. Let it release naturally and eat when the instant pot is ready to open!

p.s: if you don’t have an instant pot you can make this on the stove top following the above steps, it will just take longer ~40 minutes or so.

Veggie broth: I make my own by using my leftover veggies and things like kale stems etc + salt and spices in instant pot for 30 min. I keep the liquid as fresh broth.
