Easy vegan pasta sauce

Saute a few cloves of minced garlic with some olive oil until fragrant and add a 6-oz. can of tomato paste, sautéing until it’s a deep red color. Add 1/4 cup of vodka and let it sizzle, then add a can of coconut milk and some salt and simmer. Add in about a pound of cooked pasta and some pasta water and stir. Voilà!
