Fluffy protein pancakes

Dry ingredients 
1 1/4 cup spelt flour
2 tbsp vegan vanilla protein powder 
1 tbsp baking powder
Wet ingredients 
1 cup almond milk
2 tbsp maple syrup 
1 tbsp white vinegar 
3 tbsp coconut oil
In a large bowl combine dry ingredients. Add wet ingredients and mix well. 
Heat coconut oil in a pan. Cook pancake for a couple of minutes until it starts to bubble. Then flip and cook through for another 2-3 minutes. Repeat until all the batter is used. Served warm with your favourite toppings. Enjoy! .
