Lemon cream tart with coconut whipped cream

Recipe 10cm tart tin with removable bottom x 5
■Crust
•Dry 
45g GF rolled oats
45g buckwheat groats
90g raw almonds
6 Tbsp. coconut sugar
1/4 tsp pink salt
•Wet 
5 Tbsp. melted coconut oil
■Lemon cream
2 cups (480ml) coconut cream
6 Tbsp. maple syrup 
3 Tbsp. corn starch 
1/2 tsp vanilla bean paste
1/8 tsp turmeric 
4 Tbsp. lemon juice 
1 Tbsp. lemon zest
1 tsp melted coconut oil
■Coconut whipped cream 
1 can coconut cream .
■Method
(1)Chill the coconut cream can in a fridge for at least 24 hours. (2)Preheat oven to 170⁰C. Place every dry ingredient for the crust in a food processor. Process well until it reaches the consistency of flour.
(3)Add melted coconut oil into the food processor and process until it resembles wet sand. If the dough is too dry, add 1 tsp or more coconut oil. (4)Press the mixture against the sides and the bottom of the tart tins. Bake them for about 15-20 minutes or until baked through. After they have cooled down, keep them in the tart tin and transfer to the fridge until decorating. (4)In a sauce pan, place every ingredient for the lemon cream and whisk well. (5)Heat the mixture with a low-medium flame and stir consistently until the mixture thickens . (6)Remove from flame. Add more sweetener or lemon juice if you need. If you have lumps, strain the cream with a sieve before chilling. (7) Transfer it to a bowl, and cover the surface with a plastic wrap. After it has cooled down put it in a fridge. (8) Open the chilled coconut cream can, and scoop out the top layer of the cream into a bowl, as it should be solidified and separated from the water. Beat the cream with an electric hand mixer until it turns to a thick whipped cream. (9)Remove the crusts from the tins. Whisk the lemon cream until smooth. Place it into bottom of the crusts. Place the whipped cream and your choice of fruit on the top. This crust is easy to break, so keep them in the freezer or fridge until just before decorating. Treat them with extra care.
