Lentil Curry with rice and brussels

Ingredients:â €
-1 onion, choppedâ €
-2 tbsp. red curry paste/curry spices of choiceâ €
-4 cloves garlic, mincedâ €
-1 tbsp minced gingerâ €
-1 cup dry red lentils, rinsedâ €
-1 14-oz can coconut milkâ €
-1/2 cup vegetable broth/waterâ €
-salt, pepper, chili flakes, to tasteâ €

How to make:â €
In a large pot, sautee onions until tender, then add in curry paste, garlic, ginger. Coat evenly and add some water to prevent sticking. Add lentils and coconut milk to the pot, then turn the heat to low and cover the pot, stirring occasionally. Add broth/water as needed. Once lentils are tender, after 10-ish minutes, serve warm. Enjoy!
