Mini Choc chip Cookie Cheesecakes

Base:⠀
6 mashed up vegan choc chip cookies⠀
3 tbsp of melted coconut oil⠀

Vanilla Cheesecake Layer:⠀
1 cup of raw cashews soaked for 4 hours⠀
1/4 cup of coconut cream⠀
2 tsp vanilla extract⠀
3 tbsp of rice malt syrup⠀
2 tbsp of melted coconut oil⠀

Raw chocolate or melted dark chocolate to top (optional)⠀

Soak your cashews in water.⠀
Mash up some cookies in a blender or with a rolling pin.⠀
Mix with melted coconut oil and press down in a silicon muffin tray. Leave to set in the freezer.⠀
Drain and rinse your soaked cashews and blend in your food processor with the other ingredients. ⠀
Pour on top of the cookie bases.⠀
Top with chocolate (optional) and leave them to set in the freezer for 3 hours or until serving them. ⠀
Take out 20 minutes before serving. ⠀
