Scrambled Tofu Omelette

Ingredientsâ €
• 1/3 block firm tofu⠀
• 1/2 tsp. onion & garlic powder ⠀⠀
• 2 tbsp. nutritional yeast ⠀⠀
• Pinch of Himalayan salt & black pepper⠀
• Olive oil spray ⠀⠀
• 1 cup red & green bell peppers ⠀⠀
⠀⠀
Instructions:â €
1. Using a kitchen towel, press tofu to drain excess liquid. â €
3. In a medium bowl, crumbled the tofu using your hands (of a fork).â €
4. Add your dry ingredients to the tofu and mix well. â €
5. In a medium pan, spray a light coat of olive oil (or 1/2 teaspoon olive oil) and leave it on low heat.â €
6. Once the pan is warm, add the peppers and allow to sauté for 3-4 minutes.⠀
7. Add the crumbled tofu to the pan with the bell peppers.â €
8. Allow to cook for 2-5 minutes, stirring the tofu frequently.â €
9. Serve with a side of baked potatoes or on toast!â €
