Vegan madeleines


1 1/4 cups flour 
1/4 cup cornstarch 
1/4 cup sugar 
1 tsp baking powder 
100g apple sauce 
60g coconut oil or vegan butter or margarine 
1/2 cup plant milk 
1/4 tsp salt 
2 tsp pure vanilla bean extract 
Preheat oven to 180c/350F. 
Grease madeleine molds and dust with flour, set aside. Melt coconut oil/butter, set aside to cool to room temperature. Sift flour, cornstarch, sugar, baking powder and set aside. In a large bowl combine apple sauce, melted butter/coconut oil, milk, sugar. Gradually add dry mixture to wet and mix until mixture is thick and well combined.
Spoon batter into molds, place in fridge to rest for 15 mins. Bake at 180c/350F for 15 to 17 minutes, until cake springs back to the touch and is golden brown.
Remove from molds to cooling rack and dust with powdered sugar. Enjoy!
