Vegan Mediterranean Messy Lunch Bowl

Almost didn’t post this bc it’s ugly but I love these flavors together (and the fact that this is 100% plantbased, nutritious and easy to assemble on busy days). If I was bringing this on the go I’d put it in a mason jar with wettest > dryest ingredients starting bottom to top (so dressing at the very bottom) so it keeps fresh.

Ingredients:
Quinoa
Cucumbers
Tomatoes
Olives
Roasted Chickpeas
Beets
Hummus
Roasted Almonds
Tahini Dressing: 1 tbsp tahini + juice of 1/2 lemon + salt

Directions:
Cook the quinoa on stovetop (or instantpot – rice setting) with spice mix of: salt + cumin + turmeric + cayenne + paprika
.
Roast chickpeas at 400 for ~30 min until crispy. Add salt and spices (same as quinoa) after otherwise it interrupts crispiness! Tip: make sure you rinse & dry really well before
.
Dressing: Mix 1 tbsp tahini + juice of 1/2 lemon + salt + warm water if needed to thin it out
