Recipe for one loaf:
For the dough
500 gr/ 3 c organic wheat flour
1 pk/ 9 gr dry yeast
2 tbsp sugar of choice
75 ml melted vegan butter or oil
260 ml luke warm plantbased milk
1 tsp bourbon vanilla
Zest of 1 organic orange
For topping later
3 tbsp melted vegan butter
2 tbsp sugar of choice – add all ingredients into a mixer and knead for 10 minutes. Or knead on a floured surface by hands. Put the dough back into the bowl, cover with a cloth and let sit in a warm place (in the oven or in front of a heater) for 1-2 hours to rise.
Meanwhile make the filling so it can cool.
For the filling
150 gr/ 1 1/2 c cranberries washed
3 tbsp sugar of choice
Zest of 1 and juice of 2 organic oranges
1 tsp vanilla
50 ml water
– add all ingredients into a small pot and cook on medium low for about 10 minutes. The cranberries should have popped and are cooked. Set aside and let cool.
– Preheat the oven to 180*C. Roll out the dough into a large triangle shape (edges are rounded, so don’t worry about it not being perfect). Just make sure it fairly thin. Slather on the melted butter and sprinkle on the 2 tbsp of sugar. Then put the cranberry topping all over the dough and start rolling the dough lengthwise from left to right. Then slice the dough all the way from the top down and start braiding the dough with the cut sides up. Lay down into a greased loaf pan, let sit covered for another 30 minutes to rise. Then brush with a little plantbased milk and bake for 35-40 minutes.
