Vegan Potato Salad

Ingredients â €
enough for 4-6 people as a sideâ €
6 cups washed, and cubed potatoesâ €
1 1/2 cups vegan mayo, 
6 gherkins, diced
A large handful of fresh herbs, I’ve used a combo of mint, parsley and thyme⠀
1/2 red onion finely slicedâ €
3 tsp Dijon mustard â €
Salt and pepper to tasteâ €
1 TBS olive oil â €
Some chopped cos leaves if you want to bulk it outâ €

Methodâ €
Boil the potatoes until soft, depending on how small you’ve cut them, this could take between 7-12 minutes.⠀
Meanwhile, prepare the dressing with all the remaining ingredients.â €
Drain the potatoes once done, let them cool slightly. You can run them under cold water to help speed this up.â €
Stir through the sauce.â €
