VEGAN SWEET POTATO GNOCCHI

GNOCCHI (makes 2 portions)â €
1 medium sized sweet potatoâ €
½ cup rice flour⠀
½ chickpea flour⠀
coconut oil or for fryingâ €
1 cup spinachâ €
â €
STEPSâ €
1. Peel the potato and boil in cubes.â €
2. Mash the boiled potato and add the flours and salt.â €
3. Roll the dough and cut small squares. Use a fork to create a pattern. â €
4. Boil until the gnocchi hit the surface of the water.â €
5. Fry in coconut oil (also add the spinach)â €
